Creating emotions is my main goal
The emotions at the table includes many things, too many to be described in a few words. In my dishes I seek the celebration of the raw material, in a symphony of flavours and fragrances exalting each other. For me food must acquire a soul talking to the palate and the mind alike. My dishes rouse curiosity through the composition of their ingredients. For a moment, their magical essence makes them lose their tone to merge into a new taste explosion. Lightness, simplicity, care in the selection of raw seasonal ingredients combined with the attention for detail are fundamental in my job. In my work I bring a world of different food cultures, encountered during the past two decades. Yet I endeavour to relate them to the Italian tradition. This wonderful challenge constantly pushes me towards excellence.
Every day I fill my creations with this passion.
